Ingredients
1 pound of ground chicken.
1 large white potato peeled and grated.
1/2 cup oat flour or bread crumbs for binding.
1 egg.
1/2 cup fresh mint, chopped.
1/2 cup fresh dill, chopped.
1/2 cup fresh parsley, chopped.
2 tablespoons dehydrated onion.
1/2 teaspoon salt.
1/2 teaspoon ground black pepper.
Olive oil spray.


Method
Preheat oven to 400 F.  Line a sheet pan with parchment paper. Combine all ingredients except olive oil spray in a large bowl. Add an additional one or two tablespoons of oat flour if the mixture is too runny. 

With wet hands gently roll the meat mixture into 2 inch balls and place onto parchment lined sheet pan at least 2 inches apart. Spray the tops of the meatballs with olive oil spray.
Place in oven and bake for 35 minutes or until meatballs are golden and slightly crisp on the outside. Serve with tzatziki sauce and Greek salad.
