Easy Gourmet Halal Brunch Platter with Avocado Toast & Shrimp Recipe

Introduction

has become my go-to weekend showstopper since moving to my new apartment last spring. Listen - I used to stress about hosting brunch, but this platter? Total game-changer. The combination of creamy avocado toast (I seriously can't stop playing with different toppings), perfectly seasoned halal shrimp, and all those colorful sides just works. My Muslim friends particularly appreciate having a gorgeous halal option that feels special. And honestly? The whole thing comes together in under an hour, which means I actually get to enjoy my coffee with guests!

Timing

  • Prep time: 25 minutes
  • Cook time: 15 minutes
  • Total time: 40 minutes

Ingredients

  • 1 lb halal shrimp, peeled and deveined (frozen works fine - that's usually what I grab)
  • 4 ripe avocados (or 6 if you're like me and can't stop eating them while cooking)
  • 8 slices sourdough bread (any artisanal bread works but omg sourdough just hits different)
  • 2 lemons, juiced
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh herbs: dill, parsley, chives (whatever looks good at the store honestly)
  • Cherry tomatoes and cucumber for garnish

Step-by-Step Instructions

Prep the Shrimp

First things first - marinate those shrimp! Mix olive oil, minced garlic (I always end up adding extra because... garlic), lemon juice, and red pepper flakes in a bowl. Toss your shrimp in there and let them hang out for like 15 minutes. The smell is already gonna make you hungry - fair warning.

Make the Avocado Spread

While the shrimp's marinating, mash those avocados with a fork. Keep it chunky! Add salt, pepper, and a splash of lemon juice. Sometimes I throw in a tiny bit of garlic powder too - don't tell anyone but it's my secret weapon.

Toast the Bread

Get your bread nice and toasty. If you're feeling fancy (or have time between your second coffee), brush it with olive oil first. I like mine pretty dark - those crispy edges just do something to me!

Cook the Shrimp

Heat up a large skillet until it's properly hot - like, when a drop of water dances on it. Cook those shrimp for about 2 minutes each side. They should be pink and slightly curled, but not like, Easy Gourmet Halal Brunch Platter with Avocado Toast & Shrimp  rubber-band tight (we've all been there, right?).
