Introduction
is my absolute go-to when I'm craving something that feels indulgent but won't wreck my healthy eating goals. I first stumbled upon this combo during my trip to Greece last summer - oh my goodness, the aromas! The chicken gets this gorgeous char from the grill, while the potatoes turn perfectly crispy-golden (seriously, they're like little nuggets of heaven). And that garlic sauce? It's basically clouds of creamy goodness that ties everything together. My kids literally beg for this dinner now - even my picky 6-year-old!
Timing
- Prep time: 20 mins
- Cook time: 35 mins
- Total time: 55 mins
Ingredients
- 4 chicken breasts (about 6 oz each, organic if possible)
- 2 lbs baby potatoes (those tiny yellow ones work best!)
- 6 cloves garlic (or more... I won't judge 😉)
- 1/2 cup Greek yogurt (full-fat makes it dreamy)
- 3 tbsp olive oil (the good stuff, people!)
- 2 lemons (1 for marinade, 1 for serving)
- 1 tbsp dried oregano
- 1 tsp smoked paprika
- Salt & pepper to taste
Step-by-Step Instructions
Step 1: Marinate That Chicken!
Mix 2 tbsp olive oil, juice of 1 lemon, 2 minced garlic cloves, oregano, and paprika in a bowl. Smoosh the chicken around in there (technical term, obviously) and let it hang out for at least 30 mins. Longer if you've got time - I sometimes prep this before my morning coffee!
Step 2: Potato Prep
Chop those potatoes in half - or quarters if they're being stubborn. Toss with remaining olive oil, salt, and pepper. Spread 'em on a baking sheet. Don't crowd them! They need personal space to get crispy.
Step 3: Get Roasting
Pop those potatoes in a preheated 425°F (220°C) oven. They'll need about 30-35 mins total. Give 'em a shake halfway through - I usually forget and they turn out fine anyway!
Step 4: Grill Time
Fire up that grill to medium-high heat. Or use a grill pan if it's snowing like crazy (hello, February 2024!). Cook chicken 6-7 mins per side until done. The char marks should look Instagram-worthy!
Step 5: That Heavenly Sauce
While everything's cooking, blend remaining garlic, yogurt, a tiny splash of lemon juice, salt and pepper. Healthy Mediterranean Grilled Chicken, Roasted Potatoes & Creamy Garlic SauceSometimes I add fresh dill when I'm feeling fancy.
