I prepared these simple, juicy, and delicious courgettes all summer!

That crunch when you bite through the breadcrumb coating — that satisfying, golden, perfectly seasoned shell — and then boom. Melted cheese pulls away like a dream. Tender zucchini underneath, still holding a little bite. Fresh herbs woven into every single layer.

This is what happens when a vegetable stops apologizing for itself

Ingredients:

Zucchini

Ham

Mozzarella (or your preferred cheese)

Eggs (2 pieces)

Salt

Flour

Breadcrumbs

Vegetable oil/fat (for frying)

Preparation Instructions:

1. Prepare the Zucchini: Wash the zucchini thoroughly and slice it into rounds or strips as desired.

2. Assemble: Place a slice of ham and a piece of mozzarella on a slice of zucchini, then top with another zucchini slice to form a sandwich.

3. Breading: Coat each zucchini sandwich first in flour, then dip it into the beaten eggs (seasoned with salt), and finally coat thoroughly with breadcrumbs.

4. Frying: Heat the vegetable oil in a pan over medium heat and fry the zucchini sandwiches on both sides until they are golden brown and the cheese inside has melted.

Enjoy your meal!
