Ingredients
Chicken: 400g boneless chicken
Vegetables:
1 bell pepper
1 onion
8-10 garlic cloves
chilli pepper
lettuce
onion slices
tomato slices
jalapeños
Seasoning & Aromatics: 1 tbsp lemon zest, fresh coriander (chopped), 1 tsp salt (or to taste), 1 tsp sugar, 2 tsp paprika powder, 1 tsp black pepper powder, 1 bay leaf, 1/2 tsp dried thyme, 1 tsp oregano
Sauces & Liquids: 1-2 tbsp tomato paste, 1-2 tbsp vinegar, half a lemon, oil (as required), Peri Peri Mayonnaise, Peri Peri Sauce
Assembly: Tortilla, butter (as required)
Preparation Instructions
1. Marinate the Chicken: Combine the boneless chicken with the prepared aromatics, spices (paprika, black pepper, thyme, oregano), lemon zest, vinegar, and tomato paste to create the base flavor.
2. Cook the Filling: Heat oil in a pan and cook the seasoned chicken alongside the chopped bell peppers and onions until tender and fully cooked through (0:45, 1:42, 2:00, 3:09, 3:18).
3. Prepare the Wrap: Warm the tortilla on a pan with a little butter to ensure it is pliable and slightly toasted.
4. Assemble: Spread a generous amount of Peri Peri Mayonnaise and Peri Peri Sauce onto the warm tortilla. Layer with the cooked chicken mixture, fresh lettuce, onion slices, tomato slices, jalapeños, and additional bell peppers.
