Chicken stew, plain pilau & battered potatoes and kachumbari



You know those meals served at celebrations, where you fill up your plate with a little bit of everything? I really wanted something like that today so I came up with this. I am quite pleased.

For the chicken stew:
1 kg chicken (season with salt and pepper)
1 onion
1 tsp garlic paste
2 carrots
1 green bell pepper
2 tomatoes
2 tsp tomato paste
2 tsp curry powder
1 tsp chicken masala
1 chicken bouillion cube
1 cup chicken stock



Method:
Start by adding a little oil to a pan and browning the chicken. In the same pan, fry the onion till soft and add the garlic. Then add the tomato paste and stir in. Add the tomatoes and spices amd simmer fpr 5 minutes. Add the chicken back and stir in. Add the stock and let that simmer on medium heat for 20 minutes and serve.

For the potatoes:
7 medium potatoes(cut into quarters)
Par boil the potatoes in salt water for 7 minutes then drain off
For the batter;
1 cup flour
1 tsp onion powder
1/2 tsp turmeric
2 tsp garlic powder
1 tsp salt
Chopped dhania
Water

Method:
Add the dry ingredients to a bowl and add the water in slowly till you get a good consistency. (Not too thick and not too runny.

Coat the potatoes in the batter and deep fry till golden brown.
